Pumpkin Carving Kind of Night

It was a pizza delivery, pumpkin carving, football watching, fall walking, Giants cheering, spiced rum sipping stay at home kind of weekend.  Yeah, it was the kind of weekend and it made me very happy.

The pickings from the pumpkin farm:  A daddy pumpkin, mommy pumpkin (our pumpkin body types may just be a little reversed for the time being, but whatever), a Bella pumpkin and a Grady pumpkin.

I LOVE carving pumpkins.  I am not great at it and never have anything amazing, but for whatever reason I just love it.  Chris is not so much a fan, but always partakes because he loves me.  He did seem to enjoy it a lot more this year while sipping on his hot buttered rum.  I will remember that for next year.

Bella has no problem plucking my small growing pumpkins from my garden and running around the yard with them like toys (notice none of those made it to the carving table), but she was a bit scared by her white pumpkin and would only sit by it for a second when promised a treat.

Grady happily swung while we carved.  I put his pumpkin in with him so he knew that he was still a part of the whole experience.

The fruits of our labor:

To repay Christopher for being such a good sport, we tried a new kind of pumpkin seed this time a la Rachel Ray.  Because he loves anything with cinnamon and sugar, I made cinnamon and sugar seeds.  They were way better than expected.

    1. So I am totally late one this, but maybe next year you can use it. You just boil the seeds in salted water for 10 minutes and then strain and pat them dry. Drizzle olive oil over them along with 1 tablespoon of salt. Bake them at 375 for 10-12 minutes until they are golden brown and then sprinkle 2 1/2 tablespoons of sugar, 2 tablespoons of cinnamon, and 1/2 teaspoon of nutmeg over them . Return to the oven for 5 minutes and wa la – cinnamon sugar pumpkin seeds (measurements for every cup of seeds).
